One of the hardest things about eating healthier is sticking to my plan, but these Bacon Ranch Mini Pepper Poppers help!  How do I host an event like game day and keep my resolve?  Let me tell you, it is not by willpower alone! Given the chance, I will eat everything in sight and then go back for seconds. I freely admit it. No, the only thing to do is  serve no-guilt food. Like these little gems.

The ranch cream cheese has enough flavor that sometimes I serve them plain. Or I can treat them like little dip cups and stick tortilla chips on top! Even with bacon they are less than 30 calories each and provide tons of Vitamin C,  so I feel I can indulge a little.

Description

Bacon Ranch Mini Pepper Poppers – the perfect little appetizer. A sweet mini bell pepper, stuffed with ranch spiked cream cheese then topped with a bite of crispy bacon!

Ingredients

  • 2 slices bacon, cooked to crispy and cut into 24 pieces
  • 12 mini bell peppers, cut in half lengthwise, ribs and seeds removed
  • 1 (8 ounce) package reduced-fat cream cheese, softened
  • 11/2 tablespoons dry ranch dressing mix

Instructions

  1. In a medium skillet, cook bacon until crispy. Drain on paper towel and set aside.
  2. In a small bowl, combine cream cheese with ranch dressing mix. Stir until all dry mix is incorporated into cream cheese.
  3. Using a teaspoon, spread the inside of each bell pepper half with 2 teaspoons of cream cheese mixture. Smooth the top.
  4. Place a bacon piece on each mini pepper. Enjoy!

Notes

Omit the bacon to make these vegetarian.
