Lime Marinated Chicken Tacos are a perfect meal for everyday. The meat can be prepared a day ahead and reheated for easy, delicious tacos anytime.

Ingredients

  • 3 chicken breasts halved lengthwise
  • 2 tbsp taco seasoning or 1 packet
  • 1 medium lime
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12 medium taco shells
  • Pico De Gallo lettuce, sour cream, shredded cheese, taco sauce

  1. Half the chicken horizontally with a sharp knife into chicken cutlets. Sprinkle both sides of each chicken piece with half the salt and pepper. Squeeze the juice from 1/2 of the lime onto chicken, then sprinkle chicken with 1/2 of the taco Seasoning. Turn the chicken over and repeat on the other side. Pile the chicken breasts into a medium bowl, cover and refrigerate for at least 3 hours.
  2. Preheat grill or grill pan. Cook chicken approximately 4 minutes on each side, until reaching 165°F degrees internally. Remove and cover with foil. Allow chicken to rest 5 minutes then cut into small bite-size pieces.
  3. To assemble, fill bottom of each taco shell with chicken pieces, then add a squeeze of lime juice. Top with garnishes and enjoy!
