PF Changs Knockoff Lettuce Wraps -  perfectly seasoned chicken that tastes just like the original!

I don’t usually attempt  restaurant knockoffs. I have tried a few and was so disappointed with the results.  I would get the recipe for this or that dish and be all excited to try it at home.  Then crushing failure.  Some of my results were so bad I ended up throwing it all away.  I could have actually went to the restaurant for the cost of the food I wasted.  So I was skeptical when I decided  to do PF Changs Knockoff Lettuce Wraps.  But I love this dish so much that I was willing to try.

Scale

Ingredients

  • 1 tablespoon sesame oil
  • 1 pound ground chicken
  • 1 large chopped onion
  • 2 tablespoons minced garlic
  • 1 tablespoon soy sauce
  • 1/4 cup hoisin sauce
  • 2 teaspoons fresh ginger
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha sauce
  • 8 ounce can water chestnuts, minced
  • 2 teaspoons sesame oil
  • 1 heads Little Gem lettuce
  • 3 tablespoons Ponzu (citrus flavored soy sauce)
  • 3 Tablespoons Thai Chili Sauce

Instructions

  1. Wash, dry and separate leaves of lettuce. Set aside.
  2. In a medium skillet, over medium heat, warm up 1 tablespoon sesame oil.  Add the chicken and the onion and cook until cooked thru, about 5 – 7 minutes. The onion will become translucent.  Break up any chunks of chicken as it browns.
  3. In a measuring cup, whisk together garlic, soy sauce, hoisin sauce, fresh ginger, rice vinegar and sriracha sauce.  Pour into the skillet with the chicken. Add the water chestnuts. Stir until the chicken, onions and water chestnuts are coated and the sauce starts to thicken, about 5 minutes.
  4. Remove from heat. Stir in 2 teaspoons of sesame oil. Salt to taste.
  5. In a small bowl, mix the Ponzu with the Thai Chili Sauce.
  6. Spoon about 2 tablespoons of the chicken mixture into a lettuce leaf, and top with sauce. Fold the lettuce over like a taco to eat.

Notes

Update: I prefer to use Little Gem lettuce for this recipe. It is a mild lettuce with leaves that are much smaller and more delicate than iceberg.
