Ingredients

  • 16 ounce jar roasted red peppers drained
  • 14.5 ounce can diced tomatoes drained
  • 1/2 cup sliced almonds
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or sherry vinegar
  • 1 tsp smoked paprika optional
  • 2 tbsp chopped parsley
  • 1 tsp sea salt

Instructions

  1. Place all the ingredients in a food processor or blender. Pulse until smooth or leave a little texture if that grabs you. Taste and add a little more salt or olive oil to your liking.
  2. Serve hot or cold as a sauce for pasta, over chicken, as a dip for crackers...whatever you dream of.
