Slow Cooker Smoked Sausage Potatoes is a cozy crockpot meal that's always a dinnertime winner! Easy to make, it's simply comfort food in a bowl.

Ingredients

  • 32 ounces frozen diced potatoes thawed in refrigerator
  • 16 ounces smoked kielbasa sliced then halved
  • 2 cups shredded Monterey Jack cheese or cheddar
  • 10.5 ounce condensed cream of chicken soup 1 can
  • 1 cup milk whole or 2%
  • 1 tbsp dried chives
  • 1/2 tsp ground black pepper
  • 1/8 tsp cayenne pepper
  • chopped fresh parsley and red pepper flakes optional

Instructions

  1. Lightly grease a 6 to 8 quart slow cooker. Or use a slow cooker liner.
  2. Add potatoes, sausage and cheese to the slow cooker insert.
  3. In a small bowl, stir together the cream of chicken, milk, chives, black pepper and cayenne. Pour over the potato mixture. Stir to combine.
  4. Cover and cook on Low 5 to 6 hours, or on High 3 to 4 hours. It's done when the potatoes are tender and heated thru. Stir before serving.
