Add the onion in the slow cooker, arrange the brats on top. Add the garlic and caraway seeds.
Pour the beer over ingredients in the slow cooker.
Cover and cook on low for 6 - 7 hours. Brats are done when they have reached 160-165°F on instant read thermometer inserted in center of brat.
Serve the brats on buns with onions and desired toppings.
