Lime Jalapeno Poppers - baked rather than deep fried with a zesty pop  of lime.

Ingredients

  • 8 large jalapeno peppers
  • 8 ounce cream cheese room temperature
  • 1 medium lime zest and juice
  • salt and pepper

Instructions

  1. Preheat the oven to 400°F. Grease or spray with non-stick cooking spray a large sheet pan.
  2. Slice peppers in half lengthwise and remove seeds.
  3. In a small bowl, mix the cream cheese with lime juice, salt and pepper until blended. Fill each of the jalapeno halves with the cream cheese mixture. Sprinkle each pepper with lime zest.
  4. Bake on center rack of oven for 15-20 minutes, until the jalapeno pepper is softened and the cream cheese is golden brown on top. Remove from the oven and serve warm.
