Homemade Fruit and Nut Granola is a healthy mix of oats, cranberries, sunflower seeds, coconut and cashews are splashed with a maple syrup mixture, then baked to crispy perfection. Great as a family-friendly breakfast and easy to customize!

Ingredients

  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup sweetened coconut flakes
  • 1/4 cup cashew pieces
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 tsp kosher salt
  • 1/4 cup coconut oil melted

Instructions

  1. Preheat oven to 325°F.
  2. In a large bowl, add rolled oats, cranberries, sunflower seeds, coconut flakes, and cashews. Stir to combine.
  3. In a small bowl, whisk together maple syrup, brown sugar, salt and coconut oil. Pour maple syrup mixture over oat mixture and stir until oat mixture is coated.
  4. Turn mixture out onto a large baking sheet (or 2 smaller ones) and spread out into a shallow layer.
  5. Bake on center rack for 45 minutes, turning granola mixture halfway thru. Granola is done when mixture starts to look dry. Remove from the oven and allow to cool completely on pan.
  6. Store in an airtight container for up to 2 weeks. Does not require refrigeration.
