Easy Italian Chicken Giardiniera is a delicious, full of flavor recipe made with only 5 pantry ingredients. It's 30 minute supper cooking at it's tastiest!

Ingredients

  • 1 tbsp olive oil
  • 1 pound chicken breast boneless, skinless cutlets
  • salt and pepper to taste
  • 1 cup mild giardiniera chopped
  • 1/2 cup mozzarella cheese shredded
  • 2 tbsp parmesan cheese shredded
  • sliced olives and chopped parsley for garnish

Instructions

  1. Heat olive il in medium skillet until shimmering. Add chicken and sprinkle with salt and pepper. Cook 4 - 5 minutes on each side until golden brown and has reached 165°F on an instant read thermometer inserted in thickest part of chicken.
  2. Top chicken with giardiniera, dividing equally among breasts. Sprinkle cheeses equally over vegetables. Cover pan and cook until cheeses are melted.
  3. Garnish with parsley and serve hot.
