Ingredients

  • 4 large eggs hard boiled
  • 1 loaf french bread
  • 1 tbsp olive oil
  • 6 ounce herb goat cheese
  • 1 tbsp fresh dill

Instructions

Make the Eggs:
  1. Place your eggs in a pot and cover with cold water by 2 inches.inch. Add a teaspoon of table salt to the water. Bring water to a boil over medium-high heat, set timer and allow to boil for 8 minutes. Drain water, then shock eggs by adding cold water to the pan. Allow eggs to sit in water until just cool enough to handle.
  2. Crack egg shell lightly on hard surface and peel. Slice eggs into thin round slices.
To Make the Crostini Toasts:
  1. Preheat oven to 425°F. Slice bread into 1/2 inch thick slices (24 or more depending on loaf size). Brush olive oil on both sides of bread slices. Place in a single layer on baking sheet. Bake 6 - 8 minutes, turning once, until golden.  Cool on rack.
Assemble the Crostini:
  1. Spread softened goat cheese on each bread slice (about 1 tablespoon). Top with eggs slice and a sprinkle of dill.
