Ingredients

  • 1 cup frozen corn thawed
  • 1 medium jalapeno pepper seeded and chopped
  • 1/2 cup red pepper chopped
  • 2 tbsp chopped red onion
  • 2 tbsp fresh cilantro minced
  • 1/2 tsp kosher salt
  • 2 tbsp fresh lime juice
  • 1 tsp honey

  1. In a small bowl, combine corn, jalapeno,red pepper,onion, and cilantro.
  2. In a second small bowl or cup, stir together the honey, lime juice and salt.
  3. Pour the honey mixture over the corn and stir to coat.
  4. Serve immediately or cover and refrigerate up to 2 days.

2 ears of fresh cut corn can be substituted for the frozen corn
