Easy Chewy Brown Sugar Cookies

Soft and chewy, with a hint of molasses, these easy to make Brown Sugar Chocolate Chip Cookies are bake and go. No chilling required!

Ingredients

  • 1 cup unsalted butter melted
  • 1-3/4 cup light brown sugar divided
  • 3/4 tsp kosher salt
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1-1/2 cups chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, beat melted butter, 1-1/2 cups brown sugar and salt until fluffy. Add eggs and vanilla. Beat until well combined. Stir in flour and baking soda. Continue stirring until flour is incorporated. Fold in chocolate chips.
  3. Scoop balls of dough, 1-inch round. Roll in reserved brown sugar. Place on baking sheet at least 2 inches apart. Press down dough to flatten.
  4. Bake on center rack of oven until puffed and edges are golden, 10 - 12  minutes.
  5. Allow to cool on pan for 5 minutes, then transfer to a cooling rack to cool completely.
  6. Store in airtight container, at room temperature for up to 3 days. Freeze for up to 3 months.
