A super healthy side dish made with crisp cucumbers, tomatoes, red onion and parsley, then drizzled with a homemade sweet and sour dressing.

Ingredients

For the Salad
  • 1 pound cherry tomatoes halved, about 2 cups
  • 1 medium English cucumber peeled and cubed, about 2 cups
  • 1/2 medium red onion thinly sliced, about 1/2 cup
  • 1/4 cup chopped parsley
For the Dressing
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 tbsp maple syrup plus extra to taste
  • 1/8 tsp ground black pepper more to taste
  • 1/8 tsp salt more to taste

Instructions

  1. In a large bowl, toss all of the salad ingredients until well blended.
  2. Place all dressing ingredients in a small bowl and whisk until smooth. Pour dressing over salad and toss. Let sit 5 minutes to lightly marinade salad before serving.
  3. Refrigerate remaining salad in a covered container for up to 3 days.
