A super healthy side dish made with crisp cucumbers, tomatoes, red onion and parsley, then drizzled with a homemade sweet and sour dressing.

Ingredients
For the Salad
1poundcherry tomatoeshalved, about 2 cups
1mediumEnglish cucumberpeeled and cubed, about 2 cups
1/2mediumred onionthinly sliced, about 1/2 cup
1/4cupchopped parsley
For the Dressing
1/2cupolive oil
1/4cupred wine vinegar
3tbspmaple syrupplus extra to taste
1/8tspground black peppermore to taste
1/8tspsaltmore to taste
Instructions
In a large bowl, toss all of the salad ingredients until well blended.
Place all dressing ingredients in a small bowl and whisk until smooth. Pour dressing over salad and toss. Let sit 5 minutes to lightly marinade salad before serving.
Refrigerate remaining salad in a covered container for up to 3 days.
