Creamed Cauliflower with cream, butter and seasonings is a healthy and tasty alternative to your favorite mashed potatoes.

Ingredients

  • 1 large cauliflower head cut into florets (8 cups)
  • 1/3 cup heavy cream or half and half
  • 2 tbsp unsalted butter
  • 1 tsp onion powder
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 1 tbsp parsley optional

  1. Place cauliflower in the bottom of large pot. Add 2 inches of water. Cover the pot and bring to boil over medium-high heat. Reduce heat and simmer 10-12 minutes, until cauliflower is fork tender. Drain and transfer cauliflower to bowl of food processor.
  2. Add cream, butter, onion powder, seasoned salt, pepper and nutmeg. Pulse until cauliflower is smooth. You may need to work in batches. Scrape into serving dish.
  3. Garnish with parsley, pepper and additional butter (optional) and serve hot.

Notes

Note - salt can be omitted from recipe, season to taste before serving.
If using salted butter, adjust amount of added seasoning salt to taste.
