Quick and tasty chicken meal with a delicious sauce to swoon over -great for any weeknight!

2poundschicken breastsliced in half lengthwise
2tbspvegetable Oil
salt and pepper
1cupchicken broth
1/4cuplemon juicefrom 1 lemon
1tbsplemon zest
1/4cupsugar
3tbspcornstarch
3tbspcold water
1tbspdried chives
Instructions
In a large skillet, heat t oil over medium-high heat. Add chicken breast pieces and fry about 4 minutes on each side, until golden brown. Meat should read 165°F on meat thermometer when inserted at thickest part of the breast.
Remove the cooked chicken breasts from the skillet and set aside.
In the same skillet, bring the chicken broth to a boil, stir in lemon juice, sugar and lemon zest. Bring the mixture back to a boil.
In another small bowl, combine the cornstarch and water, then stir into the lemon sauce. Stirring continuously, cook until thickened. Adjust sugar and lemon to taste. Add chives and stir.
Place chicken breasts on a serving plate and spoon sauce over the breasts.
* While chicken breasts are very cold, slice each breast in half lengthwise to make 2 thin chicken breast pieces. This will allow faster and more even cooking.
