Ingredients

  • 3 large tortillas cut in half, flour or corn
  • 3 cups cooked shredded chicken
  • 15 ounce canned black beans rinsed and drained
  • 10 ounce diced tomatoes with green chilies drained
  • 1 cup corn
  • 1 packet taco seasoning mix
  • 3 cups shredded Mexican blend cheese divided
  • 2 cups green enchilada sauce divided
  • 1 tbsp green onion sliced (optional)
  • cooking spray

Equipment

Instructions

  1. Preheat oven to 350°F. Coat 9 x 13 pan with cooking spray.
  2. Spread 1/2 cup of sauce over bottom of prepared pan. Place tortillas one at a time in baking dish, turning over to coat, to cover bottom of baking pan.
  3. In large mixing bowl, add 1 cup shredded cheese, chicken, beans, tomatoes with chilies, corn, taco seasoning and remaining enchilada sauce. Stir to combine. Transfer to baking dish, smoothing into an even layer. Sprinkle with remaining cheese to cover.
  4. Cover pan with foil that's been sprayed with cooking spray. Bake on center rack of oven for 30 minutes. Uncover and bake an additional 10 to 15 minutes until cheese is melted and starting to brown. Let stand 5 minutes before cutting. Garnish with green onions to serve.
