Naan Bread Breakfast Pizza

Ingredients

  • 4 small naan bread rounds 4 (1-ounce) naan bread rounds
  • 2 tbsp olive oil
  • 4 ounces cream cheese softened
  • 1 tsp minced chives
  • 1/8 tsp black pepper
  • 8 slices bacon cooked, chopped into bite-size pieces
  • 4 large eggs
  • 1/2 cup cheddar cheese shredded

Instructions 

  • Set the oven to broil and move rack to the second highest position.
  • Lay the Naan Bread on a large baking pan and use a basting brush to oil lightly on bottom side of each bread.
  • In a small bowl, mix cream cheese with chives and pepper. Spread each naan bread with about 1 tablespoon of cream cheese mixture. Divide bacon pieces evenly between naan breads, then sprinkle evenly with the cheese.
  • Transfer the baking pan to the oven, under the broiler. Broil 4 to 5 minutes until cheese is melting and starts to bubble. Watch carefully.
  • Meanwhile, crack eggs into non-stick skillet (or spray with non-stick cooking spray). Cover and cook sunny side up, until egg whites are firm.
  • Remove naan bread pizzas from oven and top each with a fried egg. Sprinkle with more chives and salt and pepper to taste. Serve hot.

Chef Tips

If the Naan Bread edges start to burn before the egg is done, cover the edges with foil to protect from the heat until the egg reaches desired firmness,
