Sprinkle Chocolate Chip Peanut Butter Cookies

These pretty Sprinkle Chocolate Chip Peanut Butter Cookies with lots of peanut butter, mini chocolate chips and sprinkles make them so flavorful and festive for the holidays.

Ingredients

  • 3/4 cup peanut butter
  • 1/2 cup butter or margarine softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar light or dark
  • 2 large eggs
  • 1 tsp vanilla
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mini chocolate chips
  • 1/2 cup candy sprinkles

Instructions

  1. Preheat oven to 375°F. Get out baking sheets and line with parchment paper for easy clean-up. Pour candy sprinkles into a shallow bowl. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment (or electric hand mixer) mix peanut butter and butter at medium speed until well combined. Beat in sugars, eggs and vanilla until well mixed, scraping bowl as needed. Stir in flour, baking powder and salt until well blended and smooth. Gently stir in the chocolate chips.
  3. Use hands to shape dough into 1-1/2 inch balls. Place dough ball into shallow dish on top of sprinkles. Use a flat bottom drinking glass to press dough into sprinkles and flatten to about a 1/4 inch. Carefully peel dough off bottom of glass and place sprinkle side up on baking sheet.
  4. Bake 10 - 12 minutes until cookies are starting to brown around the edges.. Remove from oven and cool on pan for 5 minutes before transferring to wire rack to cool completely.

Notes

Peanut butter may vary in consistency so if needed, add additional flour by tablespoon until dough is thick enough to roll into balls.
