Orzo with Snap Peas and Peanuts packs amazing flavor and crunch in every bite! And this dish is healthy too, with lots of protein and fiber!

Ingredients
1tbspolive oil
1cupOrzouncooked
2cupslow-sodium chicken stock
1/2tspsalt
1cupsnap peas
1/4cupunsalted peanutschopped
2tbspchampagne vinegaror rice vinegar
Instructions
Heat olive oil in a large skillet over medium-high heat. Add uncooked orzo to the pan and cook 3-4 minutes, stirring occasionally until the orzo becomes fragrant and just starts to turn golden.
Add the unsalted chicken stock and salt to the skillet and bring to a boil. Boil 8-10 minutes until the liquid is almost absorbed. Add in the snap peas, cover and cook for 2 minutes.
Remove the skillet from the heat and stir in unsalted peanuts and vinegar.
Note- substitute rice vinegar or another mild vinegar for the champagne vinegar. If using plain white vinegar, reduce vinegar to 1 TBSP and add 1 TBSP water.
Note - reduce fat by using olive oil cooking spray instead of the 1 TBSP olive oil.
