Orzo with Snap Peas and Peanuts packs amazing flavor and crunch in every bite! And this dish is healthy too, with lots of protein and fiber!

Ingredients

  • 1 tbsp olive oil
  • 1 cup Orzo uncooked
  • 2 cups low-sodium chicken stock
  • 1/2 tsp salt
  • 1 cup snap peas
  • 1/4 cup unsalted peanuts chopped
  • 2 tbsp champagne vinegar or rice vinegar

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add uncooked orzo to the pan and cook 3-4 minutes, stirring occasionally until the orzo becomes fragrant and just starts to turn golden.
  2. Add the unsalted chicken stock and salt to the skillet and bring to a boil. Boil 8-10 minutes until the liquid is almost absorbed. Add in the snap peas, cover and cook for 2 minutes.
  3. Remove the skillet from the heat and stir in unsalted peanuts and vinegar.

Notes

Note- substitute rice vinegar or another mild vinegar for the champagne vinegar. If using plain white vinegar, reduce vinegar to 1 TBSP and add 1 TBSP water.
Note - reduce fat by using olive oil cooking spray instead of the 1 TBSP olive oil.
