Homestyle Meatloaf Freezer Meal

Homestyle Meatloaf is pretty much total comfort food - right from your freezer. It's deliciously easy to mix and tastes just like Grandma used to make.

Ingredients

  • 2 slices loaf bread
  • 2 pounds lean ground beef
  • 1 large egg
  • 3/4 cup barbecue sauce divided
  • 1 cup bread crumbs plain or italian
  • 2 tbsp minced onion flakes
  • 2 tbsp worcestershire sauce
  • 1-1/2 tsp salt
  • 3/4 tsp black pepper
  • 1/4 tsp thyme flakes

Instructions

  1. Lightly grease a 9 x 5 foil loaf pan. Lay bread flat in bottom of pan.
  2. In a large bowl, combine beef, egg, 1/2 cup barbecue sauce, bread crumbs, minced onion, worcestershire sauce, salt, pepper and thyme. Mix just until blended.
  3. Transfer meat mixture to foil pan and shape into a loaf. Cover top with foil, then wrap entire loaf in plastic to seal out air. Freeze for up to 3 months.
To Cook Right Away
  1. Preheat the oven to 350°F/180°C.
  2. Place loaf pan on baking sheet to catch any juices that bubble over. Bake covered for 1 hour, raise oven temperature to 400°F/200°C and continue to bake for an additional 10 minutes. Meatloaf is done when internal temperature reaches 160°F/70°C on meat thermometer. Remove pan from the oven and allow to cool 10 minutes before slicing.
To Cook After Freezing - Recommended to Thaw Before Baking
  1. Thaw frozen meatloaf in refrigerator overnight. Remove plastic before cooking.
  2. Preheat the oven to 350°F/180°C.
  3. Bake covered for 1 hour, then raise oven temperature to 400°F and bake an additional 10 minutes. Meatloaf is done when internal temperature reaches 160°F/70°C. You may want to set the loaf pan on a cookie sheet to catch any juices bubbling over. Allow to cool for 10 minutes before slicing.

Notes

Recipe makes one (8 serving) meatloaf.
We don't recommend baking from frozen. The outside of the meatloaf may start to burn before the center reaches a food safe temperature of 160 F/ 70 C.
