Easy Mexican Sopes are fresh and delicious appetizers that will be a hit at your next party - top them with your favorites like beans, cheese and sour cream!
Start by measuring the masa into a medium bowl. Add the water and use a fork to mix it into a thick dough. The dough should feel soft and spongy.
Divide the masa into 20 portions and roll the masa into balls. Press the dough with your hands to form small thick patties, about 3 inches across.
Heat a large skillet on high, DO NOT ADD THE OIL YET, and cook each patty for 1 - 2 minutes on each side until lightly browned.
Immediately after cooking the patties, use your hands to press around the edges of the patties to form a rim about 1/4 inch high. Be careful doing this because the dough patties will be very HOT! While you are doing this, keep the sopes warm by covering them with a cloth.
Heat the oil in the skillet and fry the sopes until golden. Remove and drain on paper towel to absorb any excess oil.
Spread a tablespoon of refried beans on each sope. Then top with the sliced chicken, cheese, tomato, onion, lettuce and sour cream. Serve warm!
