Arrange bay leaves, rosemary and sage in a circle on large platter or board.
Place cheese cubes overtop herbs, making sure herbs are still visible.
Arrange salami slices and olives on top of cheese. Garnish with tomatoes. Place crackers in the center of wreath for serving.
Cover leftovers tightly with plastic wrap and refrigerate.
