Mozzarella Herb Chicken Bake are succulent chicken breasts with layers of mozzarella cheese and a creamy herb sauce.

Ingredients

  • 2 pounds chicken breasts boneless, skinless, 6 medium cutlets
  • 1/2 cup mayonnaise*
  • 1/2 cup sour cream*
  • 1/2 cup grated parmesan cheese divided
  • 1 tbsp dried parsley flakes
  • 1 tsp dried thyme
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 6 ounce mozzarella cheese 6 slices

Instructions

  1. Preheat oven to 375°F. Grease a 9 x 13 or similar size baking dish.
  2. Use a sharp knife to slice thick chicken breasts in half lengthwise, to make 6 cutlets. Place chicken breasts in single layer in the bottom of baking pan.
  3. In a small bowl, combine the mayonnaise, sour cream, 1/4 cup of the parmesan cheese, salt, pepper, parsley, thyme and garlic. Spread evenly over each chicken breast.
  4. Top each breast with mozzarella cheese and remaining 1/4 cup parmesan cheese.
  5. Bake for 1 hour, until cheese is crisp and chicken is at least 165°F on instant read thermometer. Let chicken rest for 5 minutes before serving.
