Amazing Chicken Lo Mein

Amazing Chicken Lo Mein with garlic, soy sauce and ginger tastes like take out, but even better!  The secret is in the moist, marinated chicken!

Ingredients

  • 12 ounce Chinese or Ramen noodles uncooked
For the Sauce:
For the Chicken:
  • 1-1/2 pounds chicken breast boneless, skinless, thinly sliced
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon ginger minced
  • 4 cloves garlic minced
  • 1 tablespoon vegetable oil
For the Vegetables:
  • 1 red pepper thinly sliced
  • 1 cup carrots shredded
  • 1/2 cup green onions sliced thin
  • 6 ounces snow peas cut into bite size pieces
  • 1 tablespoon vegetable oil optional
  • Additional green onion slices for garnish optional

Instructions

  1. Prepare noodles according to package directions, drain and set aside.
  2. In a small bowl, whisk together  the sauce ingredients. Set aside.
  3. In another medium bowl, combine the chicken with the soy sauce, ginger and garlic. Set aside.
  4. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the chicken and cook, stirring constantly until the chicken is cooked thru, about 2 - 3  minutes, depending on thickness of chicken slices. Remove from wok and set aside.
  5. Heat additional 1 tablespoon of oil in wok, if needed. Add red pepper, carrots, green onions and pea pods, stirring constantly, cook until just tender about 2 minutes.
  6. Add sauce, chicken and noodles to wok and stir to combine. Using tongs makes it easier to separate noodles to toss in the sauce.
  7. Cook until heated thru and serve immediately.

Notes

For the noodles I used 4 (3 ounce) packages of Ramen noodle soup, discarding the seasoning packets.
Wok cooking goes very fast, so it is best to have all of your ingredients measured and ready before starting.
Thin slices of chicken will quickly absorb the marinade flavors and darken.
