Smooth Romesco Sauce
Easy Smooth Romesco Sauce with roasted red peppers. tomato, almonds and garlic. A bold snappy sauce perfect for pasta, chicken, eggs and more. Vegan/Vegetarian

- 16 ounce jar roasted red peppers, drained
- 14.5 ounce can diced tomatoes, drained
- 1/2 cup sliced almonds
- 2 cloves garlic
- 3 tbsp olive oil
- 1 tbsp red wine vinegar, or sherry vinegar
- 1 tsp smoked paprika, optional
- 2 tbsp chopped parsley
- 1 tsp sea salt
Place all the ingredients in a food processor or blender. Pulse until smooth or leave a little texture if that grabs you. Taste and add a little more salt or olive oil to your liking.
Serve hot or cold as a sauce for pasta, over chicken, as a dip for crackers...whatever you dream of.
