Chop Salad with Buttermilk Herb Dressing
A healthy side dish or meal, made with romaine lettuce greens, garden vegetables and sunflower seeds then drizzled with a tangy homemade herb dressing.
For the Salad
- 4 cups romaine lettuce hearts chopped
- 1 medium english cucumber sliced into bite-size pieces
- 2 stalks green onion sliced thin
- 1 cup shredded carrots
- 1 medium red bell pepper stemmed and seeded, chopped
- 2 tbsp sunflower seeds
- 1 tbsp fresh parsley chopped
For the Dressing
- 1/4 cup buttermilk
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tsp lemon juice
- 1 tbsp fresh parsley minced
- 1 tsp fresh dill chopped
- 1 tsp celery seeds
- 1/2 tsp sugar
- 1/4 tsp Dijon mustard
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp kosher salt optional
- 1/8 tsp ground black pepper
In a large bowl, toss all of the salad ingredients until well blended.
Place all dressing ingredients in a small bowl and whisk until smooth.
Serve salad family style, with dressing on the side.
Refrigerate remaining salad in a covered container for up to 3 days and dressing in a sealed container for up to 1 week.
