Ingredients

  • 16 ounce uncooked farfalle bowtie pasta
  • 1 tbsp unsalted butter
  • 12 ounce mushrooms sliced
  • 2 medium green onions thinly sliced
  • 1 tbsp minced garlic 5 cloves
  • 1/2 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3/4 cup whipping cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp fresh parsley chopped

Instructions 

  • Cook farfalle according to package directions. Drain, reserving 1 cup pasta liquid.
  • In a large saucepan melt butter over medium-high heat. Add mushrooms, onion, garlic, thyme, salt and pepper. Cook 8 - 10 minutes until vegetables are tender and any liquid has evaporated. Remove from heat.
  • Add mushroom mixture, whipping cream, cheese and parsley to pasta, toss to coat. Thin sauce with reserved pasta liquid as needed. Add salt and pepper to taste. Garnish with additional parsley and parmesan.
