Bacon Ranch Mini Pepper Poppers

A sweet mini bell pepper, stuffed with ranch spiked cream cheese then topped with a bite of crispy bacon!

Ingredients

  • 2 slices bacon cooked to crispy and cut into 24 pieces
  • 12 mini red or orange bell peppers cut in half lengthwise, ribs and seeds removed
  • 8 ounces cream cheese softened
  • 1-1/2 tbsp ranch seasoning mix

Instructions 

  • In a medium skillet, cook bacon until crispy. Drain on paper towel and set aside.
  • In a small bowl, combine cream cheese with ranch dressing mix. Stir until all dry mix is incorporated into cream cheese.
  • Using a teaspoon, fill the inside of each bell pepper half with 2 teaspoons of cream cheese mixture. Smooth the top.
  • Place a bacon piece on each mini pepper.

Chef Tips

Omit the bacon to make these vegetarian.
