  • 1 medium yellow onion chopped
  • 1 medium green bell pepper diced
  • 1 cup sour cream
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp nutmeg
  • pinch cayenne
  • 16 ounces smoked sausage sliced and quartered

  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F. Spray or grease 9 x 13 or similar size baking dish.

  • Spread the mixture evenly in the prepared pan. Bake 40 - 45 minutes until golden brown.
  • Cool casserole 5 minutes before cutting and serving.

Chef Tips

Regular or reduced fat sour cream can be used.
Frozen hash browns (thawed and drained) can be substituted for the refrigerated hash browns.
