Chipotle Sausage and Bean Bake

Chipotle Sausage and Bean Bake is crispy, mouthwatering sausages,  beans and corn smothered in creamy chipotle puree. A hearty and satisfying meal in less than 30 minutes!

Ingredients

  • 1 tbsp olive oil
  • 1 pound mild Italian sausage
  • 2 cloves garlic chopped
  • 2 tbsp fresh cilantro leaves chopped
  • 2 tsp chipotle puree from 1 can ( 7 ounces) Chipotle Peppers in Adobo Sauce, see note below
  • 30 ounces Garbanzo beans 2 (15-ounce) cans
  • 1/2 cup red wine
  • 1/2 cup low-sodium chicken broth
  • 1-1/2 cups corn fresh or frozen
  • extra cilantro for garnish shredded cheese, sour cream, green onions for serving

Instructions 

  • Preheat oven to 400°F.
  • Heat large oven-safe skillet over medium heat. Add oil and sausages, browning on all sides, about 10 minutes. Remove sausages to a plate.
  • Add garlic and cilantro leaves to skillet and cook for 1 minute, stirring constantly. Push garlic and leaves to one side and add chipotle puree. Fry in place for 1 minute.  Add beans and red wine, stir and allow to simmer for 1 minute.
  • Add chicken broth, corn, salt and pepper to the skillet, stir to combine. Top the beans with the sausages, pushing sausages down into the beans.
  • Transfer the skillet to the oven and bake until the sausages are fully cooked, (165 degrees on a meat thermometer) about 10 more minutes.
  • Garnish (optional) with additional cilantro, cheese, sour cream and green onions and serve warm.

Chef Tips

NOTE - To make chipotle puree - add 7 ounce can Chipotle Peppers in Adobo Sauce to food processor. Process until smooth. Store leftovers in refrigerator for up to 2 weeks.
