Description

Slow Cooker Blueberry Almond Oatmeal is made with lots of healthy milk, steel cut oats, fresh blueberries, brown sugar and cinnamon. GrabĀ  a handful of healthy blueberries and almonds to top it off!

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 4 cups 2% or whole milk, or coconut milk
  • 1/4 cup brown or coconut sugar
  • 1/4 cup honey
  • 1 TBSP cinnamon
  • healthy pinch of salt
  • 1 cup sliced almonds
  • 1 cup blueberries
  • extra blueberries, honey and almonds for garnish (optional)
  • slow cooker
  • steel cut oats

Instructions

  1. Add all ingredients except the blueberries to the slow cooker. Stir to combine.
  2. Cover and set to high for 2 – 3 hours or low for 4 – 6 hours.*
  3. 15 Minutes before the cooking time is up, add the blueberries to the oatmeal and stir.
  4. Replace the cover and continue cooking until cooking time expires.
  5. Allow oatmeal to cool slightly, (it will thicken as it cools).
  6. Spoon into bowls, garnish with more blueberries, honey and almonds and serve warm.
  7. Store leftovers covered in the refrigerator for up to 1 week.


Notes

*Cooking times may vary. Start checking to see if done 1/2 hour before final cooking time is up.
