Perfect Pico De Gallo Recipe
Pico De Gallo ~ a cool combination of tomatoes, jalapeno, onion, lime and cilantro – a southwest flavor favorite that only takes minutes to make!
I had my first experience with Pico De Gallo at the Alamo Cafe in San Antonio, Texas. I was with a big group of native Texans who convinced me that everyone who comes to San Antonio should visit the Alamo Cafe for dinner. I am so glad that I went. Not only was the cafe absolutely charming, the food was wonderful. I ordered Chicken Quesadillas that came with a little pot of Pico De Gallo. Trying to look like I knew what I was doing, I jumped right in and smothered my quesadilla with the mix of tomato, onions and peppers. I fell in love right there and then. No questions asked. It has been many years since I lived in Texas, but I still crave the cool taste and spicy flavor of Pico De Gallo on just about everything.
Pico De Gallo is so simple that even a beginner can make it. This is what you will need …
Enjoy Pico De Gallo with Tortilla Chips or on just about any food where you want a Tex Mex flair to your dish!
- 6 Roma Tomatoes
- 1/2 medium red onion
- 1 whole Jalepeno pepper
- 1 -1/2 teaspoons dried Cilantro ( or 3 tablespoons fresh, minced)
- Juice of 1/2 fresh squeezed Lime
- salt and pepper to taste
- On cutting board, cut end off tomatoes and quarter them lengthwise. Scoop out the seeds so you are only left with flesh of tomato. Dice into small pieces, a little larger than a pea. Peel onion and dice into pieces roughly the same size as the tomato. Cut the Jalepeno in half, scoop out the seeds and remove pith. Dice into pieces about half the size of tomato and onion. Put tomato, onion and jalepeno into small mixing bowl and stir until blended. Add the Cilantro, Lime juice and salt and pepper. Stir until well blended. Enjoy.
You may substitute fresh orange juice for the lime juice, resulting in a sweeter flavor!
What started out as just a foodie favorite in Texas has become an obsession of mine to find new ways to use Pico De Gallo. It has just the right flavor to top so many things like grilled chicken, burgers, tacos, eggs, mixed into veggies and crackers.
Nothing pairs better with Pico De Gallo than fresh oven-baked Homemade Tortilla Chips!
